When you bite into our chocolat, you aren't simply enjoying candy.

We Strive to make each and every one of our chocolates special.  Whether your taste climbs to the adventurous or you enjoy the time tested flavors that take you back with memories that comfort you, we hope our chocolate is an all consuming experience.

DeVerne Augustus started creating truffles nearly 15 years ago, while in marketing,  as "thank you" gifts for referrals.  Now his dabbling has grown into the exquisite, exclusive chocolate treats available only at The French Quarter.

Our belief is that good is never good enough.  We know that we can always tweak a recipe, invent a new flavor, or find new combinations in the familiar to make it new and exciting again.  Every one of our chocolate truffles are individually crafted by hand, in small batches using the highest quality ingredients sourced from local farmers and grown in DeVerne's backyard whenever possible.  Our goal is to provide our customers with locally-produced gourmet specialties of the highest quality.  Supporting sustainable agriculture and our hometown is our focus.

Our Truffles are made with the finest ingredients  we can find. 

We start with Guittard Chocolate produce near San Franciso, CA.   Sweet Cream from local dairies, infused with the finest quality herbs, fruits and spices, from local gardens or fair trade growers from around the world. 

Cream is infused with flavor at low temperatures over long periods to capture and preserve volatile oils and flavor compounds.

Our ganaches are made in small batches, mixed by hand and allowed to ripen slowly.  This provides the ganache with a silky smooth, velvety texture.

We work mainly with Dark Bittersweet Chocolate.   Milk Chocolate, and White Chocolate truffles are also available.

Beautiful
--72% cacao bittersweet chocolate.  If anything other that chocolate in your chocolate is a sin, the is the flavor for you.
Caramel fleur de sel-- one of our most popular.  A hand made sea salt caramel sauce is added to sweet cream and hand blended with melted 72% cacao bittersweet chocolate, enrobe in 72% chocolate and garnished with fleur de sel.
Espresso-- Chocolate and coffee.  Italian espresso powder is added to sweet cream and hand blended into 72% bittersweet chocolate, enrobe in the same chocolate and garnished with the espresso powder.
FireWorks--  We take sundried whole chipotle chili peppers and pan toast them, add sweet cream and agave nectar and steep to bring out the smokey smoldering spice.  The cream is hand mixed with melted 72% bittersweet chocolate.  Enrobed in 72% bittersweet chocolate with chili powder garnish.
Ginger--  Sweet cream is steeped with fresh ginger and agave, then added to a mix of 72% and 64% dark chocolate.  The dark ganache is enrobed in a jacket of white chocolate and garnished with a sprinkle of crystallized ginger.
Cloved Orange--  We start with a whole seasonal organic orange( Valencia or Cara Cara) zested and juiced, reduced with cloves, and steeped with sweet cream.  The ganache is finished with 72% bittersweet chocolate, and exudes an exquisite spicy citrus essence.  Enrobed in dark chocolate and garnished with orange peel confit'
Key Lime Pie-- Just like Grandma's.  White chocolate is infused with key lime juice.  The ganache is rolled in homemade graham cracker crust to finish and enrobed in dark chocolate.  More graham cracker crust is used as garnish.
Malt Ganache with Honeycomb Brittle--White chocolate ganache is infused with organic barley malt syrup, and rolled in crushed honeycomb brittle, then enrobed in dark chocolate.  Think gooey, yummy malted milk ball.
Chocolate covered Sea Salt Caramels-- Our signature salted chewey caramels hand-dipped in bittersweet chocolate and garnished with fleur de sel.  A crowd favorite and top seller.
Frambois-- Luscious red raspberry infused 72% bittersweet chocolate ganache enrobed in dark chocolate and garnished with turbinado sugar.  The taste of countryside in summer.
Honey-- A mix of bitter and semi-sweet chocolate infused with local collected honey, enrobed in dark chocolate and garnished with turbinado sugar.
Jasmine flower-- 72% bittersweet chocolate ganache infused with heady tropical jasmine flower tea and agave nectar.  Just taste the far east.
Lavendar--  Fresh dried hand-picked lavendar flowers infused into dark chocolate ganache.  Soothing, fragrant and decadent.
Chocolate Covered Strawberry-- Delicious whole fruit strawberry preserves, balsamic vinegar, and tahitian vanilla infused into dark chocolate ganache, enrobed in white chocolate.  Seaonal availability.
Tarragon with Candied Grapefruit--Tarragon infused into 72% bittersweet chocolate ganache, enrobed in dark chocolate and garnished with grapefruit peel confit'.  Seasonal availability.
Chai Spice--  Dark chocolate ganache infused with chai tea.  Seasonal availability.
Pumkin Pie Spice-- The intoxicating spices of pumpkin pie infused into dark chocolate.  Seasonal availability.
Soft Cashew Brittle--A suprising twist on a classic confection.  Richer, more decadent...super.  Seasonal Availability.
Almond Toffee Rocher-- Dry roasted almond slices and honeycomb toffee wrapped in luxurious silky smooth dark or milk chocolate.
Peppermint Tingley-- Silky smooth milk chocolate molded with cool tingley mint candy bits, and infused with peppermint oil.
