Pasta


We are Spokane's exclusive source for this amazing pasta! 

This pasta is made with time honored Italian pasta making techniques.  The pasta makers have intimate knowledge of every step in the process, and each step is closely watched by their expert eyes.  In our opinion you cannot find a better pasta anywhere!

Pasta is essentially flour and water.  So the quality of the flour is integral to the final product.  Pappardelle's has searched out the best Duram wheat, which is grown in North Dakota.  This wheat is then ground in a mill that has been producing this nations highest quality durum semolina since 1922.

The flour is then turned into pasta dough in a small factory in Denver, CO.  The flavorings are all natural and preservative free,  Pappardelle's craftspeople create knead small batches of 100 pounds or less.  The dough is then extracten through bronze dies creating the disired shapes.  These special dies give the pasta it's unique, luxurious mouth feel.

Once the pasta is made it is dried in special rooms built explicitly for pasta drying.  The drying process is done at 90 degrees over the course of 24 to 48 hours.  This slower cooler drying process ensures a pasta noodle that is richer in flavor, color, and nutrition.  Although time consuming the result is a superior product for you and your family to enjoy.
